Domaine de Pajot Cotes de Gascogne

Côtes de Gascogne Blanc “Quatre Cépages”

WHY WE LOVE IT

  • A family run winery since 1973.
  • This wine is produced from organically grown grapes.

Varietal Composition: 35% Sauvignon Blanc, 35% Colombard, 20% Ugni Blanc, 10% Gros Manseng

Elaboration: Harvest is done by hand. Fermented in stainless steel tanks. Aged in stainless steel tanks before bottling. The domaine does not use any chemical fertilizers or pesticides.

Tasting Notes: This blend of Sauvignon Blanc, Colombard, Ugni Blanc, and Gros Manseng is the epitome of Gascony. Light and fruity, fresh and crisp, with a bright texture and plenty of refreshing acidity. This is a wine to drink easily as an aperitif or with a platter of shellfish.

PRODUCER BACKGROUND

Most wine growers in the region of Gascogne sell their grapes to the local coop.  This is not the case with Domaine de Pajot – The father and son team of Damien and Clement Barreau are known in Gascogne as one of the regions quality leaders, and their 40 hectares of vineyard land are planted to four grape varieties: Gros-Manseng, Ugni Blanc, Colombard and Sauvignon Blanc.  Parts of the Ugni Blanc and Colombard harvest are being distilled into Armagnac, some parcels of the Gros-Manseng go into the Domaines’ sweet wine, but their flagship dry white wine is blended from the four varieties.  Farming is organic.
