Our Cheese

Our cheeses are produced with milk from our Animal Welfare Approved herd and flock raised on certified organic pastures. We also purchase A2, single-sourced Jersey milk from a 7th generation farm in Tomales, the Silva Family Farm. Out of our immense respect for the previous inhabitants and stewards of the land, we chose to give several of our cheese names from the Coast Miwok language.

meaning “three” — a soft, bloomy-rind, triple-milk cheese made from our sheep and goat milks, with local A2 Jersey cow milk from Silva Family Dairy. Good Food Award winner. American Cheese Society Award winner.
